Stuffed Tilapia

posted Wednesday, 6 September 2006

Tilapia is a very versatile fish.  Flaky and white.  It's great blackened, fried, baked, and sauteed.

2 large Tilapia fillets

Stuffing:

1/3 C. onion

1/3 C. bread crumbs

1/3 C. cheese (provolone, mozzarella, or even cheddar is good)

1/3 C. Shrimp (canned crab meat is good too)

1 egg

1 pkg. frozen spinach thawed and squeezed of excess juice

Topping:

3 Tbsp. Caesar dressing

1/4 C. Parmesan Cheese

Mix the stuffing ingredients in a bowl.  Divide the stuffing in half and mound in two greased ceramic ramekins.  You can also mound the stuffing on a greased flat baking sheet.  Cover the stuffing with the Tilapia fillets.  Spread Caesar dressing on top of the fillets and sprinkle with Parmesan Cheese.  Bake in a preheated 400 degree oven for about 1/2 hour.

Before Baking

After Baking.  Careful!  It's Hot.

That looks yummy. I've never tried Tilapia, but I bet it was good.

Tilapia is usually one of the cheaper fishes available too, at least around here. Tasty and cheap, and this looks like a winning recipe here, thanks for sharing it!

I can substitute this recipe with another fish, right, something with flaky white meat? I don't eat Tilapia. :(

Sole, haddock, cod, or any flaky white fish should work very well. I'm afraid to ask why you don't eat Tilapia. Is it something like the reason we don't eat carp?

I've never even heard of tilapia.

It started showing up in some of the larger cities the past few years. I remember you saying you were a junk food junkie but if you were inclined you could probably find it in the frozen section at larger grocery stores and Walmart. It makes a great fish sandwich, not real fishy.

You are like the old super market slogan. "Never go grocery shopping when you are hungry." Damn that looks good, I can almost taste it. have you thought of doing a cook book. Perhaps you and Sophmom. RHG, could collaborate on the Blog-city cook book. i know there are other women in out blog-o-shere who would be willing to give recipes. It would be fun! JWL

Looks heavenly. I love tilapia. We have an "Aligator Farm" here in Colorado. Actually, it's a tilapia farm. They keep gators to dispose of the byproducts.
